slamat hari raya maaf zahir batin
even though i'm far away from my parents and family in malaysia.i still crave for my family tradition hari raya dish, my father's very own sambal goreng. at home, my father usually use organ dalaman lembu like paru,limpa,hati as the lauk but here in moscow its hard to find those things so i substitude it with ayam which turn out great.but i still prefer sambal goreng the original way.so i would like to share the recipe, hope u like it.happy cooking everyone.

sambal goreng

2 kg isi ayam ( potong cube )
1/2 kg udang
1/2 kg bawang merah (hiris halus)
3 bunga bawang putih (hiris halus)
10 batang cili merah (hiris halus)
10 batang cili hijau (hiris halus)
1 inci lengkuas (hiris halus)
5 btg serai (hiris halus)
asam jawa sebesar ibu jari(buat air asam)
6 sudu santan serbuk ( campurkan bersama 3 cawan air)
gula dan garam

-tumis bawang merah dan bawang putih sehingga layu
-masukn cili hijau dan cili merah,tumis sehingga layu.
-next serai,lengkuas serta air asam jawa,kacau rata.
-masukn santan dan ayam.biarkan ayam masak.kacau sekali sekala supaya tidak hangit
-masukn gula dan garam dan masak sehingga kuah kering (ikut suka hati nak kuah sekering mane)
-setelah kuah kering,masukn udang dan kacau
-bila udang masak,sambal goreng sedia tuk di hidang

p/s i used serbuk santan bcoz i dont have fresh santan here.i guess if u want to used fresh santan u can use around 1/2 to 1 biji kelapa.
